Tropical Potato Salad

Potato salads are an all-time classic dish and are also the perfect base to add other salad ingredients to create a delicious lunch. I’ve never been a huge fan of white potatoes so when I do eat them they need to be spruced up nicely for me to enjoy them! I’ve got a major sweet tooth so I love tropical flavours with a fruity twist. This dish combines savoury and a touch of sweet mango to deliver an exotic alternative to a standard potato salad.

It’s painfully easy to prepare, super filling and uses ingredients which are easy to pick up at any local store. Try serving on a bed of spinach or rocket or enjoy alone or as a side dish!

Tropical Potato Salad

Serving Size: Serves 2-3 as a side


  • 8 Baby Potatoes
  • 100g Mango
  • 40g Cashews
  • Juice of 1 Lime
  • 2 Garlic Cloves
  • 2 Spring Onions (Scallions)
  • 1/2 tsp Salt
  • 3 tbsp Water
  • 60g Sweetcorn
  • 1/4 Red Chilli
  • Small handful of Coriander


  1. Wash the baby potatoes and slice them in half or in quarters if they are on the bigger side
  2. Boil them in water for 20-25 mins until cooked then leave them to cool
  3. Cook the sweetcorn and leave that to cool
  4. In a blender combine all the remaining ingredients except for the chilli and the coriander
  5. Blend until smooth sauce texture is achieved
  6. Once the potato and sweetcorn are cool, combine with the sauce, coriander and chilli and then serve
